Method
 

Preparation Steps
  1. Preheat your oven to 375°F (190°C).
  2. In a medium skillet, add a generous swirl of olive oil and heat it over medium heat.
  3. Add the diced red onion to the skillet, stirring frequently for about 2 minutes until the onions become soft and translucent.
  4. Stir in the minced garlic and chopped red bell pepper, and sauté for another 2 minutes.
  5. Add the diced tomatoes into the skillet, stirring everything together and allowing it to cook for about 3-4 minutes until it thickens slightly.
  6. Gently fold in the crumbled feta cheese into the mixture.
  7. Sprinkle in dried oregano, salt, and pepper to taste and stir to combine.
  8. Create four wells in the mixture and crack an egg into each well.
  9. Transfer the skillet to your preheated oven and bake for 10-12 minutes.
  10. Once done, remove the skillet from the oven and allow it to cool for about 5 minutes.
  11. Serve warm, garnished with the freshly chopped parsley.
