For the Marinade
  • 1/2 cup Tahini Mix with water if clumpy
  • 2 tablespoons Za'atar
  • 2 tablespoons Red Wine Vinegar
  • 2 tablespoons Fresh Lemon Juice Adds acidity
  • 3 cloves Garlic Minced
  • 1 teaspoon Salt To taste
For the Chicken
  • 2 pounds Boneless, Skinless Chicken Thighs Can substitute with chicken breasts or bone-in thighs
For Garnish
  • 1/4 cup Fresh Parsley Chopped
  • Charred Peppers Optional

Method
 

Preparation
  1. In a large mixing bowl, whisk together tahini, za'atar, red wine vinegar, fresh lemon juice, salt, and minced garlic until smooth.
  2. Reserve a small portion of the marinade for later use. Place the boneless, skinless chicken thighs into the bowl, making sure they are thoroughly coated with the marinade. Cover and refrigerate for at least 1 hour.
  3. Preheat your oven to 400°F (200°C) about 15 minutes before baking.
  4. Place the marinated chicken thighs on a baking sheet lined with parchment paper and arrange in a single layer. Bake for 25-30 minutes until golden and the internal temperature reaches 165°F (74°C).
  5. Remove the chicken from the oven and let it rest for a few minutes. Drizzle reserved tahini marinade over the chicken and garnish with chopped parsley and optional charred peppers.
