Preparation Steps

  2. Cook the uncooked rice according to package instructions, then cool completely.

  4. Drizzle the rice with olive oil and other seasonings, toss gently, and bake for 30-45 minutes.
  5. Prepare chicken on a separate sheet according to package instructions; toss in sweet chili sauce if desired.
  6. Chop cucumbers, julienne carrot, thinly slice red onion, cube avocado, and mince cilantro.
  7. In a bowl, combine mayo, Greek yogurt, sweet chili sauce, sriracha, and lime juice for the dressing.
  8. In a large bowl, combine crispy rice, chicken, and chopped veggies; drizzle with dressing and toss gently.
  9. Sprinkle sesame seeds over the top before serving.
