  • 2 tablespoons Curry Powder Adjust for spice preference.
  • 1 teaspoon Turmeric Optional.
  • 1 can Full-Fat Coconut Milk
  • 2 tablespoons Soy Sauce or Tamari Use tamari for gluten-free.
  • 1 tablespoon Brown Sugar or Honey
  • 1 tablespoon Lime Juice Can substitute with lemon.
  • 1 cup Fresh Basil Leaves Substitute with 1 teaspoon dried in pinch.
Optional Add-ins
  • 1 cup Bell Peppers Adds color and crunch.
  • 1 cup Snow Peas Add during last few minutes.
  • to taste Chili Flakes For a spicy kick.
  • to taste Cilantro Use as garnish.

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Optionally, coat chicken breasts in cornstarch, season with salt and pepper, and sear in the skillet for 5-7 minutes until golden brown.
  3. Flip the chicken and cook for another 5-7 minutes until cooked through, then set aside.
  4. In the same skillet, add 1 more tablespoon of olive oil if needed and sauté the minced garlic and ginger for 1-2 minutes.
  5. Stir in the curry powder and turmeric, letting them bloom for a minute.
  6. Pour in the coconut milk, soy sauce or tamari, brown sugar or honey, and lime juice, stirring to combine.
  7. Return the chicken to the skillet and simmer in the sauce for 10-15 minutes.
  8. Add chopped fresh basil in the final minutes and adjust seasoning before serving.
