  • 1 cup Sweet Corn canned or frozen
  • 4 cups Chicken Stock low-sodium recommended
  • 1 tbsp Olive Oil for sautéing
  • 2 tbsp Fresh Parsley for garnish

Step‑by‑Step Instructions
  1. In a mixing bowl, season bite-sized pieces of chicken with garlic powder, smoked paprika, oregano, salt, and pepper.
  2. Heat olive oil in a large pot and brown the seasoned chicken for about 5 minutes.
  3. Sauté finely diced onion, chopped carrot, and red bell pepper in the same pot until softened.
  4. Return browned chicken to the pot and combine with BBQ sauce, pinto beans, sweet corn, and chicken stock.
  5. Bring mixture to a gentle boil, then reduce heat and let it simmer for about 10 minutes.
  6. Stir in chopped parsley, adjust seasoning, and serve hot, garnished as desired.
