- Heat two tablespoons of olive oil in a large pot over medium heat for 1–2 minutes until it glistens.
- Add 1 pound of diced boneless, skinless chicken breasts. Season with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
- In the same pot, add 1 diced onion and 2 minced garlic cloves. Sauté for 2–3 minutes until onion is translucent and garlic is fragrant.
- If using, toss in 1 diced bell pepper and cook for another 2 minutes, stirring occasionally.
- Stir in 1 cup of orzo pasta, followed by 4 cups of chicken broth and 1 cup of heavy cream. Bring to a boil while stirring frequently.
- Lower to a gentle simmer and cover. Cook for 10-12 minutes until orzo is tender.
- Return the cooked chicken to the pot and stir in 1 cup of grated Parmesan cheese until melted and creamy.
- Serve warm, garnished with chopped parsley.
