Preparation Steps
- Preheat oven to 400°F (200°C) and position an oven rack in the center.
- Melt 2 tablespoons of butter in a skillet over medium heat. Add one diced onion and 2 minced garlic cloves, sauté for 3-4 minutes until translucent.
- Add the seafood mix to the skillet and cook for 3-4 minutes until just cooked through.
- Sprinkle 2 tablespoons of flour over the seafood mixture and stir well, cooking for an additional 1-2 minutes.
- Gradually pour in 1 cup of seafood stock, stirring constantly until thickened.
- Lower heat, mix in 1 cup of heavy cream and 1 tablespoon of Old Bay seasoning, then add 1 cup of frozen peas and carrots.
- Stir in 1 cup of shredded cheddar cheese until melted.
- Prepare Cheddar Bay biscuit dough according to package instructions and drop over the seafood filling.
- Bake in the preheated oven for 20-25 minutes until the biscuit topping is golden-brown.
- Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
