Preparation Steps
  1. Preheat oven to 400°F (200°C) and position an oven rack in the center.
  2. Melt 2 tablespoons of butter in a skillet over medium heat. Add one diced onion and 2 minced garlic cloves, sauté for 3-4 minutes until translucent.
  3. Add the seafood mix to the skillet and cook for 3-4 minutes until just cooked through.
  4. Sprinkle 2 tablespoons of flour over the seafood mixture and stir well, cooking for an additional 1-2 minutes.
  5. Gradually pour in 1 cup of seafood stock, stirring constantly until thickened.
  6. Lower heat, mix in 1 cup of heavy cream and 1 tablespoon of Old Bay seasoning, then add 1 cup of frozen peas and carrots.
  7. Stir in 1 cup of shredded cheddar cheese until melted.
  8. Prepare Cheddar Bay biscuit dough according to package instructions and drop over the seafood filling.
  9. Bake in the preheated oven for 20-25 minutes until the biscuit topping is golden-brown.
  10. Let cool for 5 minutes before serving. Garnish with fresh parsley if desired.
