  • 4 medium Russet Potatoes Scrubbed and pierced
  • 2 tablespoons Olive Oil For greasing
  • 1 teaspoon Salt To taste
  • 1 teaspoon Pepper To taste

  • 1 pound Ground Beef Can substitute with beans or lentils for vegetarian option
  • 2 tablespoons Taco Seasoning Or to taste
For Toppings
  • 1 cup Shredded Cheddar Cheese Or Monterey Jack
  • 1 cup Sour Cream Or Greek yogurt
  • 1/2 cup Chopped Green Onions
  • 1 cup Diced Tomatoes Fresh or canned
  • 1/2 cup Sliced Black Olives Optional
  • 1/4 cup Chopped Cilantro Optional
  • 1 jalapeño Jalapeños Sliced, optional for heat

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes. Pierce each potato several times with a fork, rub with olive oil, and season with salt and pepper.
  3. Place the potatoes on the oven rack or baking sheet and bake for about 45-60 minutes until tender.
Cooking the Filling
  1. While the potatoes bake, heat a skillet over medium heat and brown the ground beef, stirring occasionally.
  2. Once browned, add taco seasoning and water as per packet instructions. Simmer for about 5 minutes.
Assembling Potatoes
  1. After the potatoes are done, slice them lengthwise and fluff the insides with a fork.
  2. Spoon the seasoned beef mixture into each potato, then sprinkle shredded cheese on top.
  3. Return to the oven for an additional 10-15 minutes, or until cheese is melted and bubbly.
  4. Remove from oven, let cool slightly, and add desired toppings.
  5. Serve hot and enjoy!
