  • 1 teaspoon Lemon Zest Zest of one lemon
  • ½ cup Chicken Broth Low-sodium options can be used
For the Rice
  • 3 cups Cooked White Rice Leftover rice works well
  • ½ cup Parmesan Cheese Freshly grated
  • 2 tablespoons Butter For creaminess
  • ¼ cup Parsley or Italian Herbs Chopped; optional

  • 1 cup Vegetables e.g., spinach, mushrooms, roasted peppers
  • ½ cup Dairy-Free Parmesan For a lighter or vegan version

Method
 

Cooking Instructions
  1. Preheat a large skillet over medium-high heat for about 2 minutes. Add olive oil and butter, letting the butter melt.
  2. Season the sliced chicken with salt, pepper, and Italian seasoning. Cook in the skillet for 3-4 minutes on each side until golden brown. Remove chicken and let it rest.
  3. Add another tablespoon of butter and minced garlic to the skillet. Sauté for about 30 seconds until fragrant. Pour in chicken broth and lemon juice, scraping the pan to deglaze.
  4. Return chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to absorb flavors.
  5. In a separate saucepan, mix cooked rice with butter, minced garlic, and parmesan over low heat until creamy. Add a splash of chicken broth if needed.
  6. Stir in chopped parsley and lemon zest into the rice before serving. Mix well.
  7. Serve garlic parmesan rice topped with chicken and drizzle with sauce. Garnish with parsley or lemon zest if desired.
