- Preheat a large skillet over medium-high heat for about 2 minutes. Add olive oil and butter, letting the butter melt.
- Season the sliced chicken with salt, pepper, and Italian seasoning. Cook in the skillet for 3-4 minutes on each side until golden brown. Remove chicken and let it rest.
- Add another tablespoon of butter and minced garlic to the skillet. Sauté for about 30 seconds until fragrant. Pour in chicken broth and lemon juice, scraping the pan to deglaze.
- Return chicken to the skillet and spoon the sauce over it. Simmer for 2-3 minutes to absorb flavors.
- In a separate saucepan, mix cooked rice with butter, minced garlic, and parmesan over low heat until creamy. Add a splash of chicken broth if needed.
- Stir in chopped parsley and lemon zest into the rice before serving. Mix well.
- Serve garlic parmesan rice topped with chicken and drizzle with sauce. Garnish with parsley or lemon zest if desired.
