  • 1 kg Boneless, Skinless Chicken Thighs/Breasts
For the Sauce
  • 2 tablespoons Olive Oil or another neutral oil

  • 2 tablespoons Ají Amarillo Paste or substitute with turmeric (1 tsp) and paprika (½ tsp)
  • 1 medium Yellow Onion finely diced
  • 2 cloves Garlic Cloves minced
  • 1 cup Chicken Broth preferably low-sodium
  • 1 cup Heavy Cream or evaporated milk
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Optional Sugar to balance heat
For Garnishing and Serving
  • to taste Fresh Cilantro for garnish
  • 2 cups Cooked White Rice or Quinoa
  • 2 cups Fried Plantains

Method
 

Step-by-Step Instructions for Churu Chicken Amarillo
  1. Pat the chicken dry and season with salt and black pepper. Let it rest for about 10 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown.
  3. In the same skillet, add more olive oil if needed. Sauté the diced onion for 5 minutes, then add minced garlic and cumin for 1 minute.
  4. Stir in ají amarillo paste and cook for 2 minutes. Add chicken broth and let it simmer for 3 minutes.
  5. Pour in heavy cream and cook for 2-3 minutes until the sauce thickens.
  6. Return the chicken to the skillet, spooning sauce over it. Simmer for 5 minutes.
  7. Garnish with cilantro and serve with rice or quinoa and fried plantains.
