Cooking Steps
  1. In a large pot or Instant Pot set to sauté mode, heat over medium-high. Add the ground beef, chopped onion, and bell pepper. Cook for about 5–7 minutes until browned and tender.
  2. Stir in minced garlic and cook for an additional 1–2 minutes until fragrant.
  3. Pour in beef broth, diced tomatoes, salsa, and taco seasoning mix. Stir well to combine.
  4. For Instant Pot, close the lid and cook for 2 minutes. For stovetop, bring to a simmer and cook for 30 minutes on low.
  5. After cooking, add softened cream cheese, heavy cream, and grated cheddar cheese. Stir until melted and smooth.
  6. Taste and adjust seasoning if necessary. Serve hot with toppings like sour cream, diced avocado, or fresh cilantro.
