Pasta
  • 8 ounces fettuccine or penne use your choice of pasta
  • 1 teaspoon salt for boiling water
Chicken
  • 2 boneless chicken breasts sliced seasoned with salt and pepper
Sauce
  • 1 tablespoon olive oil for sautéing
  • 2 cloves garlic minced
  • 1 package Boursin cheese
  • 0.5 cup reserved pasta water for creamy sauce
Garnish
  • 2 tablespoons fresh parsley chopped
  • 0.5 cup Parmesan cheese grated, optional

Method
 

Cooking Instructions
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and reserve a cup of pasta water.
  2. Heat olive oil in a skillet over medium heat. Add the sliced chicken, season with salt and pepper, and sauté for 5-7 minutes until golden brown and cooked through. Remove from the skillet.
  3. In the same skillet, lower the heat and add minced garlic. Sauté for 1-2 minutes until fragrant. Add the Boursin cheese and stir until melted. Gradually mix in half a cup of reserved pasta water to form a creamy sauce.
  4. Return the cooked pasta and chicken to the skillet. Toss together over low heat for 2-3 minutes, adding more pasta water if needed to achieve desired creaminess.
  5. Serve immediately, garnished with fresh parsley and grated Parmesan if desired.
