Step-by-Step Instructions
  1. Marinate Chicken: Combine chicken breasts with Cajun seasoning and olive oil, cover, and refrigerate for at least 30 minutes, or overnight for better flavor.
  2. Cook Chicken: Heat a large skillet, add butter, and sear marinated chicken for 6–7 minutes per side until golden brown and cooked through. Let rest before slicing.
  3. Sauté Aromatics: In the same skillet, add chopped red onion and minced garlic, sauté for 3–4 minutes until translucent. Stir in remaining Cajun seasoning.
  4. Prepare Rice: Add day-old cooked rice to the pan, mixing with onion and garlic for 3–4 minutes until heated through.
  5. Make Creamy Sauce: In a separate saucepan, melt 25 g of butter, whisk in milk, then add cream cheese and Parmesan until smooth.
  6. Assemble Dish: Serve rice with sliced chicken on top, drizzle creamy sauce, and garnish with parsley.
