- Reduce heat, mix in the cheddar cheese into the sauce until melted and smooth.
- Grease a baking dish, layer half of the potato slices, followed by half of the cheese sauce, and sprinkle with extra cheese.
- Repeat layering with the remaining potato slices and sauce. Cover with foil and bake for 40 minutes.
- Remove foil, add the final cup of cheese, and bake for an additional 20 minutes until golden and tender.
- Let cool for 10-15 minutes, then sprinkle chopped chives or parsley before serving.
