  • 4 medium russet or Yukon gold potatoes washed and sliced
  • 4 tablespoons Butter or margarine for a dairy-free option
  • 1 medium Onion diced
For the Sauce
  • 4 cloves Garlic minced
  • 2 cups Heavy cream or half-and-half for a lighter sauce
  • 1/4 cup All-purpose flour omit for gluten-free version
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Pepper adjust to taste
  • 1 teaspoon Fresh thyme or dried thyme (use less)
  • 1/4 teaspoon Cayenne pepper omit for milder flavor
For the Cheesy Layers
  • 2 cups Cheddar cheese freshly grated
  • 1/4 cup Chives optional, for garnish

Method
 

Instructions
  1. Preheat your oven to 375°F. Wash and optionally peel the potatoes, then slice them thinly for even cooking.
  2. In a medium saucepan, melt the butter over medium heat. Add diced onion, sauté until translucent, then stir in minced garlic, thyme, and flour.
  3. Gradually whisk in heavy cream, bring to a gentle simmer, and season with salt, pepper, and cayenne.
  4. Reduce heat, mix in the cheddar cheese into the sauce until melted and smooth.
  5. Grease a baking dish, layer half of the potato slices, followed by half of the cheese sauce, and sprinkle with extra cheese.
  6. Repeat layering with the remaining potato slices and sauce. Cover with foil and bake for 40 minutes.
  7. Remove foil, add the final cup of cheese, and bake for an additional 20 minutes until golden and tender.
  8. Let cool for 10-15 minutes, then sprinkle chopped chives or parsley before serving.
