Method
 

Instructions for Creamy French Chicken Casserole
  1. Preheat your oven to 350°F (180°C).
  2. Pat the chicken dry and season with salt. Heat olive oil in a skillet and brown the chicken for 5-7 minutes on each side.
  3. Cook chopped bacon in the same pan until crispy, then sauté shallots and celery for 3-4 minutes before adding garlic.
  4. Deglaze the pan with brandy, scraping the bottom and simmer for 2-3 minutes.
  5. Stir in flour, then whisk in chicken broth and apple cider until smooth and thickened.
  6. Return chicken and bacon to the pan, add thyme, bring to a boil, cover, and bake for 30 minutes.
  7. Remove the cover and bake for an additional 30 minutes, then check for doneness.
  8. Sauté apple wedges in a skillet until golden brown.
  9. Stir heavy cream into the casserole, bake uncovered for another 20 minutes.
  10. Fold in sautéed apple wedges before serving.
