Step-by-Step Instructions for Creamy One-Pot Spinach Tomato Pasta
  1. Heat 1 tablespoon of sun-dried tomato oil in a large pot over medium-high heat for about 1 minute.
  2. Add finely chopped onion and sauté until translucent and slightly browned, around 3-5 minutes.
  3. Add minced garlic and sun-dried tomatoes to the pot. Sauté until garlic is fragrant, around 2-3 minutes.
  4. Stir in the tomato paste, cooking for an additional 2 minutes.
  5. Gradually pour in 2 cups of chicken stock, scraping the bottom of the pot to deglaze.
  6. Bring the liquid to a simmer over medium heat for about 2 minutes.
  7. Reduce heat to low; stir in 1 cup of heavy whipping cream and season to taste.
  8. Add 12 ounces of penne pasta to the pot, cooking uncovered for about 10 minutes.
  9. Fold in 4 cups of fresh spinach and a handful of chopped basil, stirring gently.
  10. If the sauce is too thick, add reserved pasta water or extra chicken stock as needed.
  11. Stir in 1 cup of freshly grated Parmesan cheese until melted completely.
  12. Serve hot, garnishing with extra Parmesan and fresh basil if desired.
