Ingredients

  • 1 lb Lean Ground Beef (90% lean) Consider ground turkey for a leaner option.
  • 1 packet Taco Seasoning Feel free to make your own.
  • ¾ cup Red Enchilada Sauce Try green enchilada sauce for a fresh spin.
For the Tacos
  • 2 ½ cups Oaxaca Cheese Any good melting cheese will work.
  • 10 pieces Corn Tortillas Opt for flour tortillas for added softness.
  • 1 tbsp Olive Oil Avocado oil makes for a tasty alternative.

Method
 

Preparation
  1. Preheat your oven to 450°F (232°C).
  2. In a large skillet, heat over medium-high heat and add the lean ground beef, cooking until evenly browned, about 6-8 minutes. Stir in the taco seasoning and enchilada sauce, allowing to simmer for 2-3 minutes.
  3. Warm the tortillas by stacking them, wrapping in a damp paper towel, and microwaving for 30-60 seconds.
  4. Brush one side of each tortilla with olive oil and place them oiled-side down on a large nonstick baking sheet.
  5. On one half of each tortilla, add approximately 2 tablespoons of cheese and ¼ cup of the beef mixture; top with another 2 tablespoons of cheese and fold the tortilla.
  6. Continue assembling all tacos in a single layer on the baking sheet.
  7. Bake for 16 minutes or until golden brown and crispy.
  8. Let the tacos cool for about 3 minutes before serving.
