Step-by-Step Instructions
  1. Crush freeze-dried strawberries into a fine powder. Whip heavy cream with powdered sugar and strawberry emulsion until stiff peaks form. Fold in strawberry powder and refrigerate for 30 minutes.
  2. In a saucepan, combine sliced fresh strawberries, sugar, water, and lemon juice. Cook over medium heat until thickened, about 5-7 minutes. Refrigerate until ready to assemble.
  3. Melt semi-sweet chocolate in intervals. Dip fresh strawberries in the melted chocolate and place on a parchment-lined baking sheet to harden.
  4. Spoon layers of chocolate cake cubes, strawberry mousse, and strawberry compote into serving glasses. Repeat layers and finish with mousse on top.
  5. Garnish with a chocolate-covered strawberry before serving. Chill the parfaits and serve at summer gatherings.
