- In a blender, combine 2 ripe avocados, 2 tablespoons of fresh lime juice, and 1/4 cup of your choice of fresh herbs. Blend on high until smooth, about 1-2 minutes. Add 1/2 cup of sour cream or Greek yogurt, then season with salt and pepper. Blend until fully incorporated.
- Spoon or pipe the avocado mousse into individual serving glasses or a platter, filling each container to about three-quarters full and aiming for a smooth surface.
- Slice the smoked salmon into elegant pieces and arrange them on top of the avocado mousse, distributing evenly.
- Refrigerate the plated mousse for at least 30 minutes. Cover with plastic wrap to prevent browning if preparing ahead of time. Serve cold.
