Step-by-Step Instructions
  1. In a small bowl, combine 1 teaspoon of onion powder, 1 teaspoon of garlic powder, 1 teaspoon of smoked paprika, and 1 teaspoon of dried oregano. Stir well until the spices are evenly mixed.
  2. Heat a skillet over medium-high heat and add a drizzle of oil. Add 1 pound of lean ground beef and cook, stirring occasionally, until browned and no longer pink, about 5-7 minutes. Season with salt and pepper to taste.
  3. Stir in 1 cup of chopped pepperoni and the prepared spice mix into the cooked beef. Cook for another 2-3 minutes, stirring frequently.
  4. Add 1 cup of crushed tomatoes and 2 tablespoons of tomato paste to the beef mixture. Allow it to simmer on low heat for about 2-3 minutes.
  5. Lay out 6 tortillas, evenly divide the beef mixture among them, and sprinkle with low-fat mozzarella cheese. Wrap each one tightly, sealing the edges.
  6. Preheat your oven to 200°C (400°F). Place the rolls on a baking sheet lined with parchment paper and bake for 8-10 minutes.
  7. Once cooked, remove from the oven and let cool slightly. Serve warm, optionally with marinara sauce.
