Preparation Steps
- Peel and slice the peaches, removing the pits. This should take about 5 minutes.
- Blend the sliced peaches on high for 30 seconds until smooth. Optionally strain for a silkier texture.
- In a pitcher, combine the peach puree, lemon juice and honey. Stir until well combined.
- Pour the peach mixture into chilled champagne flutes, filling halfway.
- Top each glass with about ½ cup of chilled sparkling water.
- Garnish each drink with mint leaves and serve immediately.
