Bites
  • 2 cups pickle chips drained, any type works
  • 4 oz thinly sliced corned beef can substitute with turkey or vegetarian options
  • 3 oz thinly sliced Swiss cheese can substitute with cheddar or provolone
  • 1/4 cup sauerkraut can substitute with coleslaw or shredded cabbage

Method
 

Preparation
  1. In a medium bowl, combine mayonnaise, low-sugar ketchup, sweet pickle relish, horseradish, lemon juice, Worcestershire sauce, kosher salt, and freshly ground black pepper. Mix well with a whisk for 2-3 minutes until creamy.
  2. Take 2 cups of your favorite pickle chips and drain them thoroughly. Lay them flat on a serving platter.
  3. Layer each pickle slice with thin slice of corned beef, followed by a piece of Swiss cheese, and a spoonful of sauerkraut.
  4. Drizzle the prepared dressing generously over the top of each bite or serve the dressing alongside for dipping.
  5. Secure each Reuben Pickle Bite with a toothpick if desired, and arrange back on the platter.
