Preparation
- Preheat your oven to 400°F (200°C).
- In a baking dish, toss ripe strawberries with honey, lemon juice, and optional thyme. Roast for about 20 minutes.
- Brush rustic bread slices with olive oil and toast in the oven for about 1 minute, until golden brown.
- Whip ricotta cheese in a food processor until smooth and creamy, about 30 seconds to 1 minute.
- Spread whipped ricotta on toasted bread, top with roasted strawberries and their syrup, and finish with thyme and a pinch of sea salt.
- Serve immediately while warm.
