  • 1 pound Ripe Strawberries Fresh
  • 2 tablespoons Honey
  • 1 tablespoon Lemon Juice Squeezed
  • 1 teaspoon Fresh Thyme Optional
For the Toast Base
  • 4 slices Rustic Bread Sourdough or country loaf
  • 2 tablespoons Olive Oil
For the Whipped Ricotta
  • 1 cup Whole Milk Ricotta Cheese Best quality
  • 1 pinch Sea Salt

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, toss ripe strawberries with honey, lemon juice, and optional thyme. Roast for about 20 minutes.
  3. Brush rustic bread slices with olive oil and toast in the oven for about 1 minute, until golden brown.
  4. Whip ricotta cheese in a food processor until smooth and creamy, about 30 seconds to 1 minute.
  5. Spread whipped ricotta on toasted bread, top with roasted strawberries and their syrup, and finish with thyme and a pinch of sea salt.
  6. Serve immediately while warm.
