  • 4 cups shredded green cabbage Tender variety
  • 2 medium scallions Chopped
  • 3 cloves garlic Minced
  • 1 tablespoon fresh ginger Grated
For the Sauce
  • ¼ cup soy sauce Or tamari for gluten-free
  • 1 tablespoon maple syrup Or sugar
  • 2 tablespoons rice vinegar Or apple cider vinegar
  • 1 tablespoon smoked paprika
  • 1 teaspoon coriander

Method
 

Step-by-Step Instructions for Tofu Cabbage Stir Fry
  1. In a mixing bowl, combine soy sauce, maple syrup, rice vinegar, sesame oil, and a vegetarian bouillon cube. Whisk until well-blended.
  2. Heat a large skillet or wok over medium-high heat and add oil. Add scallions and bell pepper; cook for 3-4 minutes until softened.
  3. Add minced garlic and grated ginger; stir for 30 seconds until fragrant.
  4. Crumble in the pressed tofu and sprinkle smoked paprika and coriander. Stir gently and cook for about 5 minutes.
  5. Fold in the shredded cabbage and sauté for another 4-5 minutes until tender but crisp.
  6. Pour the prepared sauce over the mixture and stir for 2-3 minutes until well-coated and slightly thickened.
  7. Remove from heat and serve hot, garnished with additional scallions.
