- Finely chop the high-quality chocolate and place it in a heatproof bowl. Heat the heavy cream until simmering and pour it over the chocolate. Let sit for 5 minutes, then stir in the butter and vanilla until smooth. Cool for 30 minutes, then refrigerate for at least 1 hour until firm.
- Once the filling is firm, scoop out portions and roll them into balls, flattening one side to create bunny ears. Refrigerate for another 20 minutes.
- Melt the chocolate for dipping until smooth, then dip each truffle fully in the melted chocolate. Place each on a parchment-lined tray and allow to set.
- Melt white chocolate, pipe bunny features on the truffles, and use it to attach decorations.
- Allow decorations to set for about 20 minutes. Serve on a decorative plate or gift in clear boxes.
