  1. Preheat your oven to 400°F (200°C).
  2. In a large baking dish, combine the coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger. Whisk until smooth.
  3. Add the chopped bok choy and zucchini into the broth, stirring gently.
  4. Arrange the frozen dumplings in a single layer over the broth and vegetables, pressing them gently into the mixture.
  5. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake for an additional 5–10 minutes until dumplings are golden.
