  • 1 (14 oz) can diced tomatoes, drained Consider fresh tomatoes in season.

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (175°C). Gather your ingredients and equipment.
  2. In a large skillet over medium heat, cook 2 lbs of lean ground beef until browned, about 7–10 minutes. Add 2 tbsp minced garlic and 1 diced onion; stir until softened.
  3. In a casserole dish, combine 2 diced peppers, 2 diced potatoes, 3/4 cup salsa, 1 can of green chiles, 1 can of black olives, and 1 can of diced tomatoes; stir well.
  4. Add the cooked beef mixture to the casserole dish with spices and combine thoroughly.
  5. Add 2 beaten eggs and stir until evenly distributed. Cover with foil and place in the oven to bake for 45 minutes to 1 hour, until potatoes are tender.
  6. Remove foil for the last 10 minutes for a crispier top if desired, then let cool slightly before serving.
