  • 1 cup Matchstick Carrots Julienne for best results

  • 1 medium English Cucumber Seeded and sliced
  • 1 medium Avocado Ripe for easy slicing

For the Peanut Sauce
  • 1/2 cup Creamy Peanut Butter Substitute as needed
  • 1 tablespoon Reduced Sodium Soy Sauce Tamari for gluten-free
  • 2 tablespoons Freshly Squeezed Lime Juice Or apple cider vinegar
  • 1 tablespoon Brown Sugar Honey or maple syrup can be substituted
  • 1 teaspoon Chili Garlic Sauce Adjust for spice preferences
  • 1 teaspoon Freshly Grated Ginger Pre-minced can be a quicker substitute

Method
 

Step-by-Step Instructions
  1. Fill a shallow dish with warm water. Dip each rice paper wrapper for 10-15 seconds until pliable.
  2. Layer your ingredients in the center of the softened rice paper, starting with lettuce and adding the rest.
  3. Fold the bottom edge over the filling and roll tightly from the bottom to the top, securing well.
  4. Arrange the rolls on a plate, covering with a damp towel to keep moist until serving.
  5. Whisk together all peanut sauce ingredients in a bowl until smooth and creamy.
  6. Serve the spring rolls with the creamy peanut sauce for dipping. Optionally chill before serving.
