  • 1 bag Coleslaw Mix or finely shredded fresh cabbage
  • 1 can Black Beans rinsed and drained
  • 1 can Canned Corn Kernels drained thoroughly
  • 1 medium Jalapeño Pepper diced, adjust for heat
  • 1 medium Red Bell Pepper chopped
  • 2 stalks Green Onions sliced thinly
  • 0.25 cup Cilantro chopped, can substitute with parsley
For Flavor
  • 2 tablespoons Taco Seasoning adjust to taste
  • 1 teaspoon Ground Cumin optional
For the Crunch
  • 1 bag Chili Cheese Fritos reserve a handful for topping
For the Creamy Dressing
  • 0.75 cup Sour Cream or Greek yogurt
  • 0.5 cup Mayonnaise or vegan mayo
  • 2 tablespoons Fresh Lime Juice freshly squeezed
  • 1 tablespoon Chipotle Sauce adjust for heat

Method
 

Preparation
  1. In a large mixing bowl, combine the coleslaw mix, black beans, drained corn, diced jalapeño, chopped red bell pepper, sliced green onions, and cilantro. Gently toss until well-distributed.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, lime juice, and chipotle sauce until smooth and creamy.
  3. Pour the creamy dressing over the veggie mix and stir together, ensuring all pieces are coated.
  4. Incorporate all but a handful of the Chili Cheese Fritos into the mix, folding gently to maintain their crunch.
  5. Top with the reserved Fritos just before serving for extra crunch. Serve immediately.
