Preparation Steps
  1. Combine the two cans of well-drained whole kernel corn, finely diced red bell pepper, and shredded Mexican blend cheese in a large mixing bowl. Fold the ingredients gently until mixed evenly.
  2. Pour in one cup of mayonnaise and sprinkle in the black pepper. Stir everything together until the mayonnaise has coated each piece thoroughly.
  3. Fold in the lightly crushed Chili Cheese Fritos just before serving to maintain their crunch.
