  • 1 tablespoon Olive Oil For searing the beef
For the Potatoes
  • 1 pound Baby Potatoes Halved for even cooking
For the Garlic Butter Sauce
  • 1/2 cup Unsalted Butter Melted
  • 4 cloves Garlic Minced
  • 1 teaspoon Onion Powder
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Rosemary
  • 1 teaspoon Salt Adjust to taste
  • 1 teaspoon Black Pepper Adjust to taste
  • 1 cup Beef Broth

Method
 

Preparation
  1. Cut the beef stew meat into bite-sized pieces and halve the baby potatoes.
  2. If desired, parboil the potatoes for about 5 minutes to shorten cooking time.
Searing
  1. Heat olive oil in a skillet over medium-high heat, add beef bites in a single layer, and sear for 3-4 minutes on each side.
Making the Sauce
  1. Combine melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper in a bowl.
Combining Ingredients
  1. Place halved potatoes and seared beef in the slow cooker, pour sauce over the top, then add beef broth.
Slow Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours.
Resting
  1. Let the dish rest for 10 minutes after cooking before serving.
