Method
 

Step-by-Step Instructions
  1. Peel the plantains and cut them into 1-2 inch pieces. Boil in salted water for 10-15 minutes until tender.
  2. Drain plantains, transfer to bowl, and mash with garlic and olive oil or butter until a slightly chunky texture is achieved. Mix in pork cracklings if using and season with salt and pepper.
  3. In a skillet, heat olive oil or butter, sauté minced garlic until fragrant, then add shrimp, cooking until pink and opaque.
  4. Shape mofongo on plates, place shrimp on top, and drizzle with pan juices.
  5. Garnish with fresh cilantro and lime wedges. Serve immediately.
