Chicken Meatballs
  • 1 lb ground chicken use breast or a mix for juiciness
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1/2 cup feta cheese crumbled
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried oregano
Lemon Orzo
  • 8 oz orzo pasta cooked according to package instructions
  • 1 tbsp olive oil splash
  • 1 whole lemon zest and juice
  • 1/4 cup fresh dill or parsley chopped

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine ground chicken, minced garlic, chopped fresh parsley, and crumbled feta cheese.
  3. Add salt, pepper, and dried oregano, mixing until combined.
  4. Form about 12-15 meatballs using 2 tablespoons of the mixture each and place on a baking sheet.
  5. Bake for 20-25 minutes, until golden brown and cooked through.
  6. In a pot, bring salted water to a boil, add orzo and cook according to package instructions.
  7. Drain orzo, mix with olive oil, lemon zest, lemon juice, and chopped herbs.
  8. Serve meatballs alongside lemon orzo, garnishing with additional herbs if desired.
