- Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.
- In a large skillet, heat olive oil over medium-high heat. Add ground turkey and spices, and cook for 7-10 minutes until browned.
- Add diced onions and bell peppers to the skillet and sauté for 3-4 minutes until the onions are translucent.
- Stir in raw sweet potato cubes and fresh spinach, cooking for an additional 3-5 minutes until combined.
- Transfer the mixture to the prepared baking dish and pour chicken broth over the top.
- Cover with aluminum foil and bake for 20 minutes to steam sweet potatoes.
- Remove the foil, sprinkle cheese over the top, and bake uncovered for another 10-15 minutes until the cheese is bubbly.
