Step‑by‑Step Instructions
  1. Preheat your oven to 400°F (200°C). Wash the baby potatoes and cut them in halves or quarters.
  2. In a large baking dish, combine the halved baby potatoes, cherry tomatoes, minced garlic, olive oil, oregano, black pepper, and a pinch of salt. Toss until well-coated.
  3. Create a nest in the center of the mixture and place the block of feta cheese in the middle. Drizzle more olive oil over the feta.
  4. Place the baking dish in the preheated oven and roast for 35-40 minutes, stirring gently halfway through.
  5. Once out of the oven, stir the feta into the mixture to create a creamy sauce. Garnish and serve warm or store for meal prep.
