  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 1/2 cup Chocolate Chips Dairy-free chocolate can be used

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. Squeeze the grated zucchini to remove excess moisture.
  3. In a mixing bowl, whisk together the zucchini, eggs, avocado oil, maple syrup, vanilla extract, and applesauce.
  4. In another bowl, sift together the whole wheat flour, cocoa powder, baking soda, baking powder, cinnamon, and salt.
  5. Gently fold the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips evenly.
  7. Fill each muffin liner about three-quarters full with the batter.
  8. Bake for 18-20 minutes until a toothpick comes out clean.
  9. Let the muffins cool in the tin for 10 minutes before transferring to a wire rack.
