  • 1 pound Italian Sausage can swap for turkey sausage
  • 3 cloves Garlic minced
  • 1 medium Sweet Onion diced
Seasoning the Broth
  • 2 teaspoons Italian Seasoning adjust to taste
  • 4 cups Chicken Stock can use vegetable broth
For the Soup
  • 9 ounces Three-Cheese Tortellini substitute as desired
  • ½ bunch Kale chopped
  • cup Heavy Cream can use half-and-half

Steps
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat until it shimmers.
  2. Add 1 pound of Italian sausage to the pot, breaking it apart with a wooden spoon.
  3. Stir in 3 minced garlic cloves and 1 medium diced sweet onion into the pot with the sausage.
  4. Next, sprinkle in 2 teaspoons of Italian seasoning and 1 tablespoon of flour.
  5. Slowly whisk in 4 cups of chicken stock and 1 cup of tomato sauce.
  6. Add 9 ounces of three-cheese tortellini into the simmering broth.
  7. Incorporate ½ bunch of chopped kale into the pot.
  8. Finally, pour in ⅓ cup of heavy cream and mix until fully incorporated.
