- In a large mixing bowl, combine crushed vanilla wafers, softened cream cheese, dry banana pudding mix, milk, and vanilla extract. Blend until smooth.
- Take tablespoon-sized portions of the mixture and roll them into balls, placing them on a parchment-lined baking sheet.
- Chill in the refrigerator for 30-45 minutes until firm.
- Melt the white chocolate chips or candy melts in a microwave-safe bowl, stirring until smooth. Stir in food coloring if desired.
- Dip each truffle into the melted chocolate, then place them back on the parchment-lined baking sheet.
- Before the chocolate sets, sprinkle the tops with crushed vanilla wafers or festive sprinkles.
- Allow to set at room temperature for 15-20 minutes or refrigerate to harden.
