Ingredients
  

For the Tofu
  • 1 block Extra firm tofu Press and drain thoroughly
  • 1/4 cup Soy Sauce or Tamari Use gluten-free if needed
For the Marinade
  • 2 tablespoons Chili Garlic Sauce Sambal Olek or adobo sauce as alternatives
  • 1 tablespoon Spicy brown mustard Avoid Dijon mustard
  • 1 teaspoon Thyme Blend with smoked paprika
  • 1 teaspoon Smoked paprika Enhances the glaze
For the Glaze
  • 1/2 cup Maple Syrup Agave syrup can be a substitute
  • 1/4 cup Nutritional Yeast Adds umami flavor
  • 1/2 cup Brown Sugar Dark brown preferred

Method
 

Step-by-Step Instructions
  1. Start by pressing the extra-firm tofu for 3 to 4 hours to remove excess moisture.
  2. Poke holes throughout the tofu using a toothpick and create a shallow crosshatch pattern.
  3. Whisk together soy sauce, chili garlic sauce, mustard, spices, and maple syrup.
  4. Place the tofu in a resealable bag, pour the marinade over it and refrigerate for at least 24 hours.
  5. Preheat the oven to 400°F (200°C), remove tofu from marinade and place it crosshatch-side up on a baking sheet.
  6. Insert whole cloves into the tofu and bake for 20 minutes.
  7. Mix brown sugar and spicy brown mustard in a small bowl and microwave for about 30 seconds until dissolved.
  8. Brush the glaze over the tofu after the initial baking and bake for an additional 10 minutes.
  9. Once the first glaze has set, brush with more glaze and bake for 15 to 20 minutes until caramelized.
  10. Let the tofu ham rest for about 10 minutes before slicing and serving.
