- Start by pressing the extra-firm tofu for 3 to 4 hours to remove excess moisture.
- Poke holes throughout the tofu using a toothpick and create a shallow crosshatch pattern.
- Whisk together soy sauce, chili garlic sauce, mustard, spices, and maple syrup.
- Place the tofu in a resealable bag, pour the marinade over it and refrigerate for at least 24 hours.
- Preheat the oven to 400°F (200°C), remove tofu from marinade and place it crosshatch-side up on a baking sheet.
- Insert whole cloves into the tofu and bake for 20 minutes.
- Mix brown sugar and spicy brown mustard in a small bowl and microwave for about 30 seconds until dissolved.
- Brush the glaze over the tofu after the initial baking and bake for an additional 10 minutes.
- Once the first glaze has set, brush with more glaze and bake for 15 to 20 minutes until caramelized.
- Let the tofu ham rest for about 10 minutes before slicing and serving.
