Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a skillet, heat olive oil over medium heat. Sauté the onion and garlic for 3-4 minutes until soft.
- Mix in sausage meat, sage, thyme, salt, and pepper until thoroughly combined.
- Roll out the puff pastry until about 1/8 inch thick and slice into rectangles (5 inches by 4 inches).
- Place sausage filling on one edge of the pastry, fold over, and seal the edges with a fork.
- Slice rolls into 3-4 inch portions and brush with beaten egg.
- Bake for 20-25 minutes until golden brown and flaky.
- Let cool on a wire rack before serving.
