For the Crust
  • 1 9-inch Pâte Sucrée or Pâte Sablée Crust use a store-bought shortcrust for convenience
For the Topping
  • 1 pint Strawberries fresh, can swap with other berries
  • 2 tablespoons Strawberry or Apricot Jam or honey/maple syrup for glazing

Step-by-Step Instructions
  1. Prepare the pastry cream by splitting the vanilla bean and heating with sugar and milk until just about to simmer.
  2. Whisk together the egg yolks and remaining sugar until light and fluffy, then incorporate cornstarch mixed with some warm milk.
  3. Combine the hot milk with the egg yolk mixture, then cook over low heat until thickened and stir in butter.
  4. Spread the cooled pastry cream evenly in the pre-baked tart crust.
  5. Wash and slice the strawberries, then arrange them artfully on top of the pastry cream.
  6. Melt the jam with water and brush this glaze over the strawberries.
  7. Chill the tart for at least 1 hour before serving.
