  • 2 cups Enchilada sauce Store-bought or homemade.
  • 2 cups Monterey Jack cheese Can swap with cheddar.

Step‑by‑Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a splash of olive oil over medium heat and sauté the chopped onion for about 5 minutes.
  3. Stir in minced garlic, chili powder, cumin, and oregano, cooking for 1 minute.
  4. Add black beans, corn, chopped cilantro, and a sprinkle of salt and pepper; cook for 3-4 minutes.
  5. Warm your tortillas in a skillet, microwave, or oven for about 10-15 seconds.
  6. Take a tortilla, place a spoonful of the filling in the center, and roll it tightly, seam side down in a greased dish.
