Ingredients

  • 2 cups Finely Diced Mushrooms Any favorite variety.
  • 1 medium White Onion Finely chopped.

  • 1 teaspoon Cumin Powder
  • 1 teaspoon Smoked Paprika A little goes a long way.
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cayenne Pepper Optional for heat.
  • 1 cup Oats Can substitute with gluten-free.
  • 1 cup Panko Breadcrumbs Gluten-free optional.
  • 1/4 cup Nutritional Yeast Adds cheesy flavor.
  • 2 tablespoons Ground Flax Egg substitute for binding.
  • 1/4 cup Fresh Parsley or Cilantro Choose based on preference.
  • 1 can Black Beans Canned for convenience.
For Flavor Enhancements
  • 1/4 cup BBQ Sauce Check for gluten-free.
  • 2 tablespoons Tamari or Soy Sauce Swap with coconut aminos for soy-free.

Method
 

Cooking Instructions
  1. Toast the walnuts in a skillet over medium heat for 5-7 minutes until golden and fragrant.
  2. Finely chop the mushrooms and onion, using a food processor for consistency.
  3. Sauté the mushrooms and onions in the same skillet with oil for 6-8 minutes, seasoning with salt and pepper.
  4. In a food processor, combine the oats, panko, walnuts, nutritional yeast, ground flax, and herbs; pulse until finely ground.
  5. Add black beans, BBQ sauce, and tamari to the mixture; pulse to combine, leaving some larger bean pieces.
  6. Mix in the sautéed vegetables and stir until well combined.
  7. Shape the mixture into 8 large patties and place on a parchment-lined baking sheet.
  8. Preheat oven to 350°F (175°C) and bake patties for 15 minutes on one side, then flip and bake another 12-15 minutes.
  9. Allow to cool for 5-10 minutes before serving.
