Cooking Instructions
- Toast the walnuts in a skillet over medium heat for 5-7 minutes until golden and fragrant.
- Finely chop the mushrooms and onion, using a food processor for consistency.
- Sauté the mushrooms and onions in the same skillet with oil for 6-8 minutes, seasoning with salt and pepper.
- In a food processor, combine the oats, panko, walnuts, nutritional yeast, ground flax, and herbs; pulse until finely ground.
- Add black beans, BBQ sauce, and tamari to the mixture; pulse to combine, leaving some larger bean pieces.
- Mix in the sautéed vegetables and stir until well combined.
- Shape the mixture into 8 large patties and place on a parchment-lined baking sheet.
- Preheat oven to 350°F (175°C) and bake patties for 15 minutes on one side, then flip and bake another 12-15 minutes.
- Allow to cool for 5-10 minutes before serving.
