Ingredients
  

For the Salmon
  • 4 fillets Salmon Fresh or frozen; wild-caught for more flavor.
  • 4 tbsp Unsalted Butter Can substitute with olive oil for a dairy-free version.
  • 4 cloves Garlic Fresh minced; 1/4 teaspoon garlic powder per clove can be used.
  • to taste Salt
  • to taste Black Pepper
For the Potatoes
  • 1.5 lbs Potatoes Medium-sized, waxy potatoes preferred.
  • 3 tbsp Olive Oil
  • 1 tsp Paprika Smoked paprika can add a unique twist.
For the Broccoli
  • 2 cups Broccoli Florets Fresh preferred; asparagus or green beans can be substitutes.
For Garnish
  • 1 whole Lemons Provide acidity and brightness.
  • 0.25 cups Fresh Parsley Can substitute with dill or chives.

Method
 

Cooking Instructions
  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash the potatoes thoroughly, cube them into bite-sized pieces, and toss with olive oil, salt, pepper, and paprika.
  3. Spread the seasoned potatoes on one side of the baking sheet and roast for about 25 minutes.
  4. In a saucepan, melt the butter over medium heat, add minced garlic, sauté, then stir in lemon juice, salt, and pepper.
  5. After 15 minutes, season the salmon with salt and pepper, place it in the center of the baking sheet, and spoon lemon butter sauce over it.
  6. Toss the broccoli with olive oil, salt, and pepper, then add it to the baking sheet around the salmon.
  7. Return the baking sheet to the oven and roast for an additional 15-20 minutes.
  8. Once done, let it rest for a few minutes before garnishing with parsley and serving.
