  • 1/4 cup Mirin Sweet rice wine; substitute with sugar and rice vinegar if unavailable.
  • 2 tablespoons Rice Vinegar Brings acidity; white vinegar can substitute.
  • 2 tablespoons Miso Paste Opt for white or yellow for milder taste.
  • 2 tablespoons Brown Sugar Coconut sugar can also be used.
  • 2 tablespoons Soy Sauce Choose tamari for a gluten-free option.
For the Salmon
  • 4 pieces Salmon Fillets Fresh or frozen, skin-on for extra flavor.
For the Garlic Noodles
  • 2 tablespoons Sesame Oil Olive oil can be used for a lighter option.
  • 4 cloves Garlic Cloves Fresh garlic is recommended.
  • 3 stalks Spring Onion Green onions can substitute.
  • 200 grams Noodles Any type; cooked and drained.
For Garnishing
  • 1 tablespoon Sesame Seeds Optional.
  • 1 tablespoon Coriander/Cilantro Parsley can be a substitute.
  • 1 piece Fresh Chillies Adjust with chili flakes for heat.

Method
 

Preparation Instructions
  1. Prepare the Miso Glaze: In a small saucepan, combine mirin, rice vinegar, miso paste, brown sugar, and soy sauce. Heat over medium for about 5 minutes, stirring gently until it simmers and thickens slightly. Remove from heat and cool for 15 minutes.
  2. Marinate the Salmon: Transfer the cooled glaze to a shallow dish and place the salmon fillets skin-side down. Coat generously with glaze, cover, and refrigerate for at least 30 minutes.
  3. Sauté Garlic and Spring Onions: Heat a large pan over medium and add sesame oil. Add sliced spring onions and minced garlic, sauté for 2-3 minutes until fragrant.
  4. Create the Noodle Sauce: Add soy sauce, rice vinegar, brown sugar, and 4 tablespoons of water to the pan. Simmer for 5 minutes.
  5. Toss the Noodles: Add cooked and drained noodles to the pan, gently toss for 2 minutes until well-coated.
  6. Preheat the Oven: Preheat to 220°C (430°F) to caramelize the salmon.
  7. Bake the Miso Salmon: Line a baking dish with parchment and transfer marinated salmon onto it. Bake for 7-10 minutes until caramelized.
  8. Serve the Dish: Plate garlic noodles, place salmon atop, and garnish with sesame seeds, coriander, and fresh chillies.
