- Trim excess fat from the beef and cut into 2-inch chunks. Chop one yellow onion.
- In a skillet, heat olive oil and sear the beef for 2-3 minutes on each side.
- Whisk soy sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes in a bowl.
- Combine the beef and onions in the slow cooker and pour the sauce over. Cook on low for 6-8 hours or high for 3-4 hours.
- Once done, shred the beef in the slow cooker. Mix cornstarch with cold water and add for thickening if desired.
- Return shredded beef to the sauce and serve garnished with green onions, sesame seeds, and cilantro.
