For the Beef
  • 2 pounds boneless beef short ribs or chuck roast cut into 2-inch chunks
For the Marinade
  • 1 tablespoon olive oil for searing the beef
  • ½ cup low-sodium soy sauce or tamari for gluten-free
  • ¼ cup light brown sugar or maple syrup
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1 tablespoon toasted sesame oil or regular sesame oil
  • 1 tablespoon fresh ginger grated
  • 4 cloves fresh garlic minced
  • 1 tablespoon gochujang optional, can use sriracha
  • 1 tablespoon honey or maple syrup optional
  • to taste black pepper
For Thickening
  • 2 tablespoons cornstarch optional, use arrowroot as alternative
  • 2 tablespoons cold water
For Serving
  • green onions for garnish
  • toasted sesame seeds for garnish
  • red pepper flakes optional, for garnish
  • fresh cilantro optional, for garnish

Method
 

Step-by-Step Instructions
  1. Trim excess fat from the beef and cut into 2-inch chunks. Chop one yellow onion.
  2. In a skillet, heat olive oil and sear the beef for 2-3 minutes on each side.
  3. Whisk soy sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic, and red pepper flakes in a bowl.
  4. Combine the beef and onions in the slow cooker and pour the sauce over. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Once done, shred the beef in the slow cooker. Mix cornstarch with cold water and add for thickening if desired.
  6. Return shredded beef to the sauce and serve garnished with green onions, sesame seeds, and cilantro.
