  • 4 fillets Halibut Tender and flaky
  • 1 teaspoon Kosher Salt Use coarse for even seasoning
  • 1 teaspoon Black Pepper Freshly ground for best flavor
For the Sauce
  • 2 tablespoons Butter Unsalted recommended
  • 1 tablespoon Extra-virgin Olive Oil High-smoke-point oil is fine
  • 2 cloves Garlic Minced
  • 0.5 cup White Wine Can substitute with chicken broth
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 2 slices Lemon For garnish
  • 2 tablespoons Capers For briny flavor
  • 0.25 cup Flat-Leaf Parsley Fresh, for garnish

Method
 

Step-by-Step Instructions
  1. Pat the halibut dry with paper towels and season with kosher salt and black pepper. Let sit for 5 minutes.
  2. In a large skillet, heat 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat until foaming.
  3. Add halibut fillets to the skillet, skin-side down, and cook for 4-5 minutes. Flip and cook for another 3-4 minutes until flaky.
  4. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in ½ cup of white wine and scrape the pan.
  5. Add the juice of 1 lemon, capers, and lemon zest. Stir and cook for 1-2 minutes to meld flavors.
  6. Stir in 1 tablespoon of butter until melted. Return halibut to the skillet and spoon sauce over it. Cook for 1 more minute.
