  • 800 g canned whole tomatoes or fresh tomatoes forms the heart of the sauce, adding acidity and sweetness
  • 1 medium onion finely chopped; brings sweetness and depth of flavor
  • 2 cloves garlic minced; enhances aroma and flavor
  • 3 tablespoons olive oil necessary for sautéing
  • salt to taste
  • pepper to taste
For the Finish
  • 250 g mozzarella cheese diced; adds creaminess and gooey texture
  • 50 g grated parmesan cheese for garnishing
  • fresh basil leaves to taste; enhances aroma and flavor

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain, reserving a cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent.
  3. Add minced garlic and sauté for an additional 30 seconds.
  4. Pour in chopped tomatoes, and season with salt and pepper. Let simmer for 15-20 minutes.
  5. Gently add cooked pasta to the skillet, mixing well. Add reserved pasta water if necessary.
  6. Stir in diced mozzarella cheese, letting it melt slightly into the pasta.
  7. Fold in fresh basil leaves just before serving.
  8. Optional: preheat oven to 180°C (350°F), pour mixture into a baking dish, top with grated parmesan, and bake for 15-20 minutes.
  9. Let rest briefly before serving, garnished with extra basil and a drizzle of olive oil.
