- Gather and prep your ingredients: chop half an onion finely, mince garlic and ginger, chop bok choy stems and leaves.
- Heat olive oil in a large skillet or wok over medium-high heat. Add garlic, ginger, and onion, sauté for 2-3 minutes until fragrant.
- Add ground meat to the skillet and cook for 5-7 minutes, breaking apart until fully browned.
- Stir in soy sauce, oyster sauce, sesame oil, salt, black pepper, and red pepper flakes. Simmer for 1 minute.
- Add bok choy stems, stir-fry for 2 minutes, then pour in water or broth. Cover and steam for 1-2 minutes.
- Uncover and add bok choy leaves. Stir-fry for 1-2 minutes until leaves are wilted but still vibrant.
