  • 1 cup Almond Milk can substitute with oat or coconut milk
  • 1/4 cup Chia Seeds essential for thickening
  • 2 tablespoons Maple Syrup can substitute with honey or agave syrup
For the Key Lime Mousse
  • 2-3 Fresh Key Limes juice and zest required
  • 1/2 cup Unsweetened Coconut Milk full-fat recommended
  • 1 cup Raw Cashews soaked beforehand
  • 2 tablespoons Maple Syrup
  • Matcha Powder optional for color and flavor

Method
 

Preparation Steps
  1. In a medium-sized bowl, combine almond milk, chia seeds, and maple syrup. Whisk vigorously for about 1 minute.
  2. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
  3. In a high-speed blender, combine soaked raw cashews, coconut milk, juice and zest of key limes, and additional maple syrup. Blend on high until smooth.
  4. Once the chia pudding has thickened, stir gently to break up clumps. Divide into serving jars.
  5. Layer the key lime mousse on top of the chia pudding in each jar and smooth for presentation.
  6. Cover each jar and refrigerate for an additional 2 hours before serving.
  7. Garnish with a slice of lime or a sprinkle of zest before serving.
