Preparation Steps
- In a medium-sized bowl, combine almond milk, chia seeds, and maple syrup. Whisk vigorously for about 1 minute.
- Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or preferably overnight.
- In a high-speed blender, combine soaked raw cashews, coconut milk, juice and zest of key limes, and additional maple syrup. Blend on high until smooth.
- Once the chia pudding has thickened, stir gently to break up clumps. Divide into serving jars.
- Layer the key lime mousse on top of the chia pudding in each jar and smooth for presentation.
- Cover each jar and refrigerate for an additional 2 hours before serving.
- Garnish with a slice of lime or a sprinkle of zest before serving.
